How to make candied ginger

Homemade Candied Ginger Recipe
Ingredients

1 pound fresh ginger (preferably young ginger for its tender texture)
2 cups reserved water (from boiling the ginger)
2 cups granulated sugar
Extra granulated sugar for coating

Instructions

1. Prepare the Ginger:
Peel the ginger using the back of a spoon or a vegetable peeler to remove the skin.
Slice the ginger into thin, even pieces-about 1/8 inch thick.

2. Cook the Ginger:
Place the ginger slices in a medium saucepan and cover them with water.
Bring to a boil, then reduce the heat to a simmer. Let it cook for about 30 minutes, or until the ginger becomes tender.
Drain the ginger, but reserve 2 cups of the boiling water for the syrup.

3. Make the Syrup:
In the same saucepan, combine the reserved water with 2 cups of granulated sugar. Stir over medium heat until the sugar completely dissolves.
Add the boiled ginger slices to the syrup. Simmer the mixture gently, stirring occasionally, for 40-50 minutes, or until the syrup thickens and the ginger becomes translucent.

4. Dry the Ginger:
Using a slotted spoon, transfer the candied ginger pieces onto a wire rack or parchment paper. Let them cool slightly until they are tacky but not wet.

5. Coat with Sugar:
Toss the cooled ginger pieces in granulated sugar until they are evenly coated. Shake off any excess sugar.

6. Store or Serve:
Allow the candied ginger to dry completely before storing. From my own experience it dries between 3-4 day. Keep it in an airtight glass container at room temperature for up to 2 months.
